The Cavalluccis were born in Siena around 1500 with the name of “Berriquocoli”, and were offered in the taverns to the stagecoach drivers, the “cavallai”, who began to make great use of them. The tradition of the little horses then spread to the upper Maremma when Siena dominated this territory. Massa Marittima, which was already an important city, soon became the second largest producer in Tuscany. They are traditionally prepared during the Christmas holidays, and are accompanied by liqueur wines such as Vin Santo.
